WIRE CUT & SHORT DOUGH BISCUITS LINE

I.B.L. – Industrial Bakery Line is pleased to present the line to produce 

short dough biscuit and wire cut cookies.

A single system able to satisfy two different production needs

without having to change the structure of the line.

SHORT DOUGH BISCUITS

The dough is processed with the planetary mixer (1).
The removable bowl (2) transfers the dough into the feeder (4) through a lifting/tilting (3).
The pasta, cutted with a guillotine, is delivered to the lifting conveyor (5) and dropped into the hopper of the rotary machine (6).
The dough formed by a forming roll passes through a conveyor (7, 8) towards the direct gas (9) and cyclothermic ovens (10).
Once cooked, the biscuit passes to the cooling conveyors (12) and to the packaging.

1, 2. PLANETARY MIXER

The planetary mixer is extraordinarily versatile and produces excellent results for any type of soft mixtures such as wire-cutting biscuits, dosed and injected products, all types of creams, raw and cooked, fresh whipped cream, meringues. The entire bridge structure is made of AISI 304 stainless steel.

3. LIFTING/TILTING

Consisting of a steel or painted iron structure, it allows the 135° tanks to be tilted through two special forks.

4. DOUGH FEEDER UNIT

The feeder receives the paste from the tilying and continuously feeds the entire processing line.
It is equipped with a guillotine for portioning the dough and a crusher with rotating stainless steel reels that crumble the dough.

6. ROTARY MOULDER MACHINE

Independent motorization of the grooved roll feed, roller mould bronze and rubber roll for belt drive, with speed adjustable by inverter. Complete with control panel touch screen.

8. IDLE HEAD OF OVEN CONVEYOR

Powered by the load conveyor, the return cap is at the beginning of the oven and serves to tension and move the stainless steel wire mesh. It has a ploughshare for internal cleaning of the belt.

9. DIRECT GAS OVENS

Ideal for laminated and roto-moulded biscuits such as snack cakes, crackers, petit beur etc, which require high temperatures and short cooking times

10. CYLOTHERMIC OVENS

Cyclotherm oven is suitable for baking of products ranging from cupcake, Swiss roll and other sponge products, extruded, wire cut and rotary moulded soft dough products through to hard/sweet and bread.

11. TRACTION HEAD OF OVEN CONVEYOR

The take off is located at the end of the oven, it is used to tension and move the stainless steel wire mesh.

12. COOLING CONVEYOR

Positioned at the end of line production. For recovery stacked and take product for wrapping machines.  Modular structure for easy assembling. Roller rubber covered for drive belt. Equipped with towing gear box with variable speed.

WIRE CUT COOKIES

The dough processed by the planetary mixer (1) is transferred via the removable bowl (2) to the lifter / tipper (13) and then to the over hopper (14). This distributes uniform amounts of dough to the underlying wire cut machine (15).
The formed product is transported (8) to the tunnel ovens (9,10).
Finally, the cooling conveyor (12) and packaging allow operators to prepare the finished product for packaging.

Equipped with wheels, it has a capacity of 300 liters.

5. WIRE CUT MACHINE

The machine extrudes the dough by means of a roller system and pumps through a die molding machine, obtaining a deposit continuous or intermittent tracking of product on the conveyor below.
